Gluten Free Breaded Pork Chops

Remember good old Shake n Bake?  You know, the super simple way of coating your favorite meat by throwing all the ingredients in a bag and then baking?  Well, this is a very similar recipe for gluten free breaded pork chops that my family loves.  Depending on how you bake them, you can opt for a soft, moist crust, or go for a crispier style if you like.  They are pretty simple to make, too.  Give them a try and tell me what you think.

Gluten Free Breaded Pork Chops


  • 4-6 Boneless pork chops
  • 1/4 cup Barbeque sauce
  • 3 tablespoons Yellow mustard
  • 1 teaspoon Lemon juice (cider vinegar will also work)
  • 2 cups Gluten free bread crumbs (Here is a recipe for gluten free breadcrumbs if you need it.)
  • 1/2 cup White rice flour
  • 1/2 cup Grated parmesan cheese
  • 1/2 teaspoon Onion powder
  • 1 tablespoon Italian seasoning
  • 1 teaspoon Black pepper


Step 1 Preheat oven to 350
Step 2 In a bowl large enough to hold all of the pork chops, whisk together the BBQ sauce, mustard, and lemon juice.
Step 3 Add all of the pork chops to the bowl and turn by hand until all of the meat is well coated. Let sit for a few minutes.
Step 4 In another bowl, combine bread crumbs, rice flour, Parmesan cheese, pepper, onion powder, and Italian seasoning. Stir until well combined. Pour the entire mixture into a large Ziploc bag.
Step 5 Place all of the pork chops into the Ziploc bag and shake and turn until all of the pork chops are well coated in breading.
Step 6 For a softer breading, place a rack on a cookie sheet and lay each individual pork chop on the rack. For a crisper breading, place pork chops directly on the cookie sheet.
Step 7 Bake at 350 for 45 – 60 minutes, or until a meat thermometer shows an internal temperature of 165 degrees.
Step 8 Remove from the oven and enjoy.
