Pamela's ProductsSometimes, life gets in the way.  Thanks to some extra work days due to snow storms in Missouri, dental work, and various things breaking around the house, I am way overdue for a few articles here on Gluten Free and Full.  But now it is time to catch up on some of this work, and there is no better place to start than Pamela’s Products.  There are companies that do one or two gluten free items and do them very well.  And then there are companies that do very robust gluten free product lines.  Pamela’s is definitely the latter.  Their product line includes several different mixes, including brownies, pancakes, pizza crust, and cornbread.  There are several more, as well.  You can also find packaged cookies and biscotti, and a line ofWhenever Bars.  We were fortunate enough to receive a sample of some of these gluten free goodies.

Before getting into the review of the products we received, I want to take a minute to point out a couple of things on Pamela’s website.  There are a ton of great recipes available on the site, many of which I would love to try when I find the time.  You can also browse the recipes by product, type, or diet.  It is really a wonderful resource.  Secondly, I was extremely pleased to see the Allergy Infolink at the top of the home page.  My family’s main concern is a gluten free diet, since that is the only allergy that we have to contend with.  I do understand, however, that there are many other food allergies that affect people.  Pamela’s clearly understands that as well.  Clicking the Allergy Info link will take you to a chart that clearly defines allergen information for all of Pamela’s products.  Kudos to the company for this chart!

Now, on with the show.  We received the following items from Pamela’s:

  • Baking and Pancake Mix
  • Biscuit and Scone Mix
  • Chocolate Brownie Mix
  • Pizza Crust Mix
  • Oat Chocolate Chip Coconut Whenever Bars

To be perfectly honest, our least favorite of these gluten free products was the Whenever Bars.  For whatever reason, there is a serious aversion to coconut in this house.  Not so much the flavor of the coconut, but the texture.  So even though the Whenever Bars tasted quite good, we simply couldn’t get over the large slivers of coconut we were chewing on.  The bars were moist, chewy, and as I said, tasted very well.  I believe most people will find the bar texture more to their liking than my family did.  There are certainly other flavors of the Whenever Bars available (I’m looking at you, oat cranberry almond!), and I plan on giving some of these a try in the future.

We tried some drop biscuits with the Biscuit and Scone Mix, and were quite impressed.  They were not what I would consider a traditional biscuit, but they were very tasty, especially with some strawberry preserves slathered on.  The biscuits were crunchy on the outside, but soft and warm in the center.  They were slightly heavy and very filling.  Good gluten free biscuits are hard to come by, but Pamela’s has created a mix that performs admirably.  If I was looking for a biscuit to drown in gravy, I would probably look elsewhere, but as a plate for your favorite jam or jelly, you can’t go wrong here.

Next up was the brownie mix.  Oh my!  Delectable!  We have had several good gluten free brownies over the years.  There are certainly gluten free brownies out there that are every bit as delicious as these from Pamela’s.  And believe me, these are delicious.  What sets this particular brownie apart from the rest is two things.  First, they are the most moist gluten free brownie we have ever had.  Just like their gluten filled counterparts, these brownies melt in your mouth as you eat them.  Secondly, they stay fresh much better than most of the other gluten free brownies we have had.  While good gluten free brownies are not that hard to come by, most get dry and tasteless after a day or two.  Not these.  They stayed fresh in a sealed container for several days.  Well done, Pamela’s!

As I have stated in previous posts, my family and I have a pizza crust recipe that we are very happy with.  So when I get new pizza crust mixes to try, I tend to use them for recipes other than a pizza crust.  Such was the case with Pamela’a Pizza Crust Mix.  We tried the dinner roll recipe that comes on the package.  The rolls were very good.  They are fairly heavy, and the texture is akin to a really thick breadstick.  While not your traditional yeast roll, these make an excellent gluten free addition to your meal.  Spread a little butter on them, or dip them in a light olive oil, and they are great.  If you make them large enough, you can even slice them in half horizontally and add Italian meatballs and Parmesan cheese to have yourself a meatball sandwich.  Yum!

And finally, I have saved the best for last.  Pamela’s obviously has a wide range of excellent gluten free products.  But if they were only going to produce one product, I would want it to be Pamela’s Baking and Pancake Mix.  In fact, it is very poorly named.  It should be really be called “Pamela’s Make Everything Under the Sun and Then Some Baking Mix”.  This is the most versatile mix I have ever come across, gluten free or not.  It would seem that the folks over at Pamela’s are well aware of this, since they included a very handy recipe booklet specifically for this mix in our package.  Pancakes?  No problem.  Waffles?  Got it covered.  Sausage rolls?  Yep.  Cornbread?  Only the best gluten free cornbread we have ever had!  No exaggeration.

Seriously, we have purchased this product several more times since Pamela’s sent us some to try.  In particular, the sausage balls and the cornbread are favorites in my home.  But we have even used this mix as a breading for chicken and pork.  There simply doesn’t seem to be a baking need that Pamela’s Pancake and Baking Mix can’t handle.  Of all of the gluten free products that we have tried to date, this mix is right up there in the top two or three.  Every gluten free household should have this product as a staple.  It is that good.
